L-methionine , also known as L-methionine, is the L-form of methionine, the chemical formula is C5H11NO2S, and the chemical properties are colorless or white shiny flake crystals or white crystalline powder, with a special smell and slightly bitter taste. Melting point is 280~281ºC. It is unstable to strong acid and can cause demethylation. Dissolved in water (5.6g/100mL, 30ºC), warm dilute ethanol, alkaline solution or dilute inorganic acid. Hardly soluble in ethanol, almost insoluble in ether. Toxicity: LD50 29mmol/kg (rat, intraperitoneal injection).
